Butter Chicken

Prep & Cooking Time: 1 hour

Technique Involved: pan frying

The Number of People It Will Serve: 6 people

 

Ingredients:

12 chicken thighs (skinless with bone)

1 cup plain yogurt

salt to taste

1 stick of butter

1 big onion minced

1 1/2 tsp ground cumin

1 1/2 tsp ground coriander

1 1/2 tsp cayenne pepper

1 cup fresh strained tomatoes

1/2 cup heavy cream

1/2 ground cashew muts

1 tsp crushed cardamon seeds

 

Instructions:

 

Make slits in the chicken and marinate over night with the yogurt and salt

 

Heat butter in a saucepan on med-hi.

Stir-fry onion until golden - NOT brown.

Add cumin, coriander, and cayenne powers as well as the tomatoes - stir

Add chicken with marinade. Reduce heat and stir.

Cook covered for 15 minutes.

Add cream, cashews and cardamon. Stir well.

Cook for another 45 minutes, stirring occassionally.

 

Nutritional Information: yikes! with all that butter...um...fattening
