Renita's Goat Cheese Pasta

Preparation Time: 30 minutes

 

Ingredients

 

  • 4 tbsp of goat cheese (or more if you want really creamy)
  • 2 large tomatoes diced
  • handful of fresh arugula
  • pasta of choice
  • 1 med zuccini diced
  • 1 med-large red pepper diced
  • 1 med onion
  • dash of olive oil
  • garlic clove diced

 

 

Instructions

 

1. Start cooking the pasta until al dente

2. On med-high heat, add the oil and garlic. When heated, add the onions. When the onion turn light brown - add the tomatoes, zuccini and red peppers.

3. When vegetables are near completed (tomatoes will be pretty much turned into a sauce) - add the pasta. Turn heat to low. Mix.

4. Add the arugula, mix.

5. Add the goat cheese, mix.

6. Enjoy

 

NOTE: I added some chicken in the dish as well. I cooked it along with the onions and then added the veggies thereafter. (www.mishsplayground.com

 

Beverage to match: Italian vino.
