Cheese Cupcakes

Ingredients:

1 1/2 cup WHITE ALL-PURPOSE FLOUR

3 teaspoon baking powder

1/2 teaspoon salt

3/4 cup MARGARINE

1 cup sugar

2 cups cheddar cheese, grated

4 eggyolks

3/4 cup FRESH MILK

4 eggwhites

1/4 teaspoon cream of tartar

1/2 cup sugar

grated cheese

 

Directions:

1. Prepare muffin pans lined with paper baking cups.

2. Preheat oven to 325ºF.

3. Sift together flour, baking powder and salt. Set aside.

4. Cream together margarine and sugar until light and fluffy. Add cheese and continue beating until well blended.

5. Add egg yolks one at a time and blend well.

6. Add dry ingredients alternately with milk.

7. In another bowl, beat egg whites with cream of tartar until soft peaks form. Gradually add sugar and continue beating until stiff peaks form.

8. Fold beaten egg whites into the batter and blend well.

9. Pour batter into muffin pans and top with grated cheese.

10. Bake 40-45 minutes or until done.
