Mango Salad

Mango Salad

Time: 30 minutes

Serves: 4

 

Ingredients

 

  • 2 green mangoes
  • 1/2 red pepper
  • 1 lime
  • 1 carrot
  • 1/4 red onion
  • handful of cilanto
  • salt and pepper to taste
  • roasted cashews (if you like nuts)

 

Instructions:

 

Skin and finely chop (long slivers) the green mango. Finely chop the red pepper, red onion and carrot. They should all be chopped so they are fine slivers. Mix all together. Make sure that the pepper, onion and carrot do not overwhelm the mango. When about to serve, mix the lime juice and salt and pepper. Dress with roasted cashews.

 

NOTE: add some steamed shredded chicken or shrimp to make it uber fancy.
