Tinola - Filipino Chicken Stew

 

Name: Esperanza Tampoya

Number of People this recipe serves - 6 to 8 people

Style of Cooking - Sauteing and simmering

Prep & Cooking Time - 30-45 minutes

 

Ingredients:

2 Tbsp Oil

1 garlic clove mined

1 branch of ginger, minced

3 Tbsp Fish Sauce (patis)

5 peppercorns

1 medium size chicken, cut in several pieces

1 bunch of bok choy washed and seperated

1 lb of green beans

1 small size cabbage seperated and halved

4 medium size potatoes

10 cups of water

 

Directions:

In a casserole, put a little oil. When its heated put garlic and ginger. When light brown, add the meat.

Saute on med-hi & add 3 spoonful of fish sauce (patis)

Saute and add water, cook till tender.

Make sure, you scrape all the meat fat bubbles that gather at the top of your broth.

Put on low heat and add 5 whole pepper & wait till your meat is tender.

Add a little patis or salt to taste.

If tender, on higher heat add the pieces of potato. Once the potato is pretty well done, add the vegetables.

Cook on med-hi until vegetables are tender to your liking.

 

Nutritional Value: Eliminate the potate to make this dish very low fat.
